  The rise of supermarkets like Veganz in Germany which in its first year 2011 had a turnover of one and a half million euros doesn't surprise writer and vegan Alex Burke. For 20 years he's been compiling guides to vegan and vegetarian dining in the UK and on the continent.

  Well, there's been quite a revolution. I call it a "vegalution". And so for example, when I started, there were a handful of vegan restaurants and about 400 vegetarian restaurants in the UK and about 100 vegetarian B&Bs. Now the total number of veggie restaurants hasn't increased that much. Maybe it's about 500 or 600, a few more B&Bs. But within that, the proportion of vegan has shot up much faster. So there're now around 30 vegan restaurants and cafes in the UK and something opening almost every month. Within the vegetarian restaurants, the proportion of vegan food has increased dramatically from 1/3 of dishes being vegan or even none to at least half in most restaurants. Many vegetarian restaurants now, for example, make all their desserts vegan which helps to differentiate them from the mainstream. And then within mainstream restaurants, a few have got it right and they don't just offer veggie dishes based on cheese. So they're offering beans, tofu, tempeh, seitan. Around the country, there are vegan restaurants and cafes popping up everywhere. So something is definitely changing.
